Магазин охотничьего снаряжения в Глюкстадте получил разрешение на запуск цеха по переработке дичи

GLUCKSTADT—A local retailer of hunting equipment and outdoor gear is set to add meat processing to their list of services. Sip Outdoors is looking to add a deer and wild game processing plant to their existing business. Owner Patrick McCraw said his customers commonly ask about deer processing services. Sip is looking to add beef products from local producers and take home meals as well. McCraw noted this will also allow them to use the space outside of hunting season. “This will not just be deer processing,” McCraw told the city board. “It will be more than that or we don’t really want to do it.” McCraw presented the addition to the city board during their regular meeting on Aug. 11. He said other local processors are small and he knows customer who are traveling hours out of town to get their deer processed. The project will include enclosing an outdoor portion of the store. Sip Outdoors will add an eight-foot fence around the back of the property for unloading the deer carcasses. Alderman Jessie Campbell asked how the company has planned to dispose of the deer carcasses. “We don’t want to smell it,” Campbell said. McCraw said removing the animal carcasses was a specific concern of his as he runs a retail store out of the space. “Neither do I,” McCraw said. McCraw said his company will contract with a disposal company that specializes in the disposal of animal carcasses. They will pick up the waste twice a week and use a dedicated dumpster. The city board approved the project unanimously. Approvals included a variance to operate a deer processing plant and a site plan for the addition to the building. Sip Outdoors opened about two years ago and is located at 412 Bus Park Drive in Gluckstadt.
