How Ya Doin’ Deli brings East Coast tastes to Vail
Hoagies and more can be found in Vail Village
When asked how long an East Coast deli concept has been in the works, Scott Rednor, the musician and owner of Shakedown Bar Vail will tell you “decades.”
“I’ve just really always had a fondness for the sandwich,” said Rednor, who just opened up a deli specializing in East Coast hoagies next to his music establishment, Shakedown Bar Vail.
“A big inspiration for this was a beloved bar that we had in college called The Pickle Barrel in Fort Collins. It was a deli and a bar that we played music at every Wednesday, and it was a fun place. A deli and bar, it just goes together, and the town of Vail needs a good, just sort of a soft hang, you know? Where you can just go in and order a beer and a sandwich and just kick it,” Rednor said.
Rednor may have spent time at Colorado State University in Fort Collins and been inspired by The Pickle Barrel, but his New Jersey roots also influence the menu.
“Back home you can get hoagies everywhere, any pizza shop, they were an everyday staple, so we thought we’d bring that here,” Rednor said. “We bring in traditional style bread from Philadelphia — seeded bread and non-seeded bread for the sandwiches.”

Try the Italian, which is ham, capicola, salami, provolone, lettuce, tomato, red onion, mayo, hot cherry peppers, salt, pepper, oregano and oil and vinegar. Or, the Sicilian if you like a little more spice with ham, spicy coppa, soppressata, provolone, lettuce, tomato, red onion, Italian aioli, cherry pepper spread, salt, pepper and oregano. Rounding out the sandwich menu you’ll find a roast beef, a turkey, a caprese or a pastrami seasoned turkey sandwich. All sandwiches come on your choice of a Liscio’s Bakery sesame seeded roll or Amoroso’s Baking Company’s unseeded roll, two Philadelphia-based bakeries.
“We’re continually developing the menu slowly, getting to understand what it’s like to run a restaurant because this is a new venture for us. So, it’s been a really great start. So far, we have a lot of repeat customers,” Rednor said. “We just want to make it as affordable as possible for lunch or a snack for the community because it seems like everything’s kind of going the other direction. We want to be community-focused. Some stop by and sit at the picnic tables outside, come after that hike, or come after work, we’ve got a lot of the construction crews coming in after work for a sandwich and a beer.”
Wash it all down with drafts like Eagle River Pilsner or Dogfish Head Hazy Pale Ale. There’s also plenty of bottled and canned beers like Coors Light and Coors Banquet, Pacifico, Bells Two Hearted IPA and more. Specialty cocktails include the How Ya Doin’ house margarita, cucumber spritz, gin sour, Mexican butterfly and espresso martini.
“The whole bar scenario was put together by Marissa Kovac, who’s worked for us at Shakedown for a long, long time,” Rednor said. “She did a great job with that and she staffed the place with wonderful human beings and it’s all sort of morphing into a bigger family for us, which is exactly the point of this experiment,” Rednor said.
This will be the first restaurant Rednor has started since he’s usually on stage performing live music for the masses but said that feeding others comes naturally for him.
“Honestly, I’ve been feeding my bandmates for so many years at the house and enjoyed it so much I just figured I would love it on a larger scale,” Rednor said. He’s also getting advice from his daughters, 12-year-old Harper and 10-year-old Charlie.
“Harper told me I have to get acai bowls, so we did that, and then they wanted smoothies, so in addition to sandwiches we have those and yogurt parfaits, and then we’ve added salads. Come try our Greek, Caprese or watermelon salads and we also have an Italian pasta salad,” Rednor said. “The kids love the extra choices and I’m probably quickly going to find myself catering children’s birthday parties. Which I’m not quite sure was in the master plan, but I’m sure there’s someone that’ll want to do that.”
Rednor said the master plan is evolving, especially because the building where How Ya Doin’ Deli is located will be undergoing a large renovation next spring.
“This summer has just been a slow build, which is what we wanted. We’re figuring it out on our end and the community has been great with us and supporting that and we’re just grateful for the opportunity,” Rednor said. “It’s just an easy place, we just want to keep it casual, keep it simple. I just love when I hear, ‘You make a great sandwich.’ That’s what we are here for.”
The deli is open Monday-Wednesday from 11 a.m. to 5 p.m. and Thursday-Sunday 11 a.m. to 8 p.m. with live music or DJ’s sprinkled in. Look for happy hour specials like well shots for $4, draft beer for $5, well drinks for $6, wine for $7 and Pacifico tallboys for $7 from 3-8 p.m. Follow the deli’s Instagram page for more specials.
